Bob's Fresh Salsa

6 Bob's Fruit Stand Keremeos Tomatoes
3 whole green onions sliced thinly
14 cup finely chopped fresh Cilantro
3 garlic cloves, crushed or chopped fine
2 tbsp. olive oil
2 tbsp. fresh lime or lemon juice
dash of lime (lemon) zest
1 tbsp. or more finely chopped jalapeno pepper
salt and pepper to taste

Slice tomatoes in half and remove seeds. Finely chop. Should measure about 3 cups. Stir in remaining ingredients. Allow flavors to blend for 1 hour. Makes 3 12 cups. Top a burger, steak or fish. Toss with pasta and grated cheeses. Stir into sour cream and serve with nachos --OR-- serve alone as a salsa dip for corn chips.
