Fresh Tomato Soup

In large pot saute 2 medium chopped onions and 3 crushed garlic cloves in 14 cup butter till onion is tender. Add 4 lbs. peeled and chopped VERY RIPE Keremeos tomatoes. Add 6 cups chicken broth (6 chicken OXO cubes & 6 cups water) 4 tbsp tomato paste, 1 12 tsp pepper.

Simmer stirring occasionally, 15 mins. or until slightly thickened. Remove from heat, cool slightly. Puree in blender then return to pot. Stir in 2 tbsp dried basil or 13 cup fresh chopped basil. Heat gently.

Serve hot, garnished with croutons or spoonful of sour cream.
(This is very good as a chunky soup also)
