Garlic Roasted Puree

4 heads of garlic.
1 ml (14 tsp) salt
15 ml (1 tbsp) fresh lemon juice
15 ml (1 tbsp) Olive Oil
1 ml (14 tsp) pepper

Preparation: Remove cloves from head. Press flat of a knife onto clove to loosen skin. Garlic is strongest when its oils are released through cutting.

Method: Preheat oven to 180°C (350°F). Slice the bottoms off heads of garlic to loosen cloves. Leave skins intact. Place in shallow bake ware. Drizzle with olive oil. Bake for 20min. Cool. Slip from skins & place in food processor. Add salt, pepper & lemon juice. Process until smooth. Spread this mild puree on toasted French bread, baked potatoes or grilled chicken. Makes 34 cup.
