Strawberry Jam (Cooked)

4 12 cups of prepared fruit (mashed or put through blender)
3 14 cups of sugar
14 cup of lemon juice

Put prepared fruit, sugar & lemon juice in Large pan, bring to full rolling boil, stirring constantly. Turn heat down and allow to boil slowly for 5 to 7 minutes longer, still stirring constantly. Take off stove and stir and skim foam off of the jam while allowing the jam to cool for five minutes. Fill sterilized jars and cover with parafin wax.

When using less sugar, store in fridge.
