Lentil Soup

1. Saute - 1 large onion, 3 carrots, 3 celery stalks + 4 garlic cloves in 13 cup olive old (all sliced up) for 20 - 30 minutes at med. heat, stirring constantly.
2. Wash + rinse 1 cup lentils + boil for 25 mins in 3 cups water.
3. Combine 1 + 2, add pinch of sage, thyme, salt + pepper. Add 1 cube chicken broth. Boil 25 mins, add fresh spinach and 14 - 13 cup soy sauce during last 5 minutes. Delicious!
